Focaccia Bread
Here's what you'll need:
- 3 cups + 3 tablespoons of bread flour
 - 1 heaping tablespoon of sugar
 - 1/2 tablespoon of salt, plus a pinch for the top
 - 2 tablespoons of extra virgin olive oil
 - 1 3/4 cups of warm water
 - 2 1/2 tablespoons of fresh yeast
 - Fresh rosemary & thyme
 
Instructions:
- Place all of the ingredients together in a mixing bowl, trying to keep the salt and the yeast separate initially.
 - Mix together either by hand or with a food processor using the dough hook, and knead for about 10 minutes (you should expect a very soft dough).
 - Leave it to rise to about double its size, then roll out on a well floured surface.
 - Place in an oiled baking tray and set aside for another half hour to double in size again.
 - Push holes with your finger tips until they almost touch the bottom of the pan.
 - Sprinkle rock salt over the top, and drizzle liberally with extra virgin olive oil.
 - Bake in a hot oven at 390 degrees for about 16 minutes.
